Beef Mexican
Mexican beef with salad for a western style dinner.

Ingredients
- 1 Onion Chopped
- 1 Clove Garlic chopped
- 2 tbsp Butter (Oil optional)
- 300g Minced Steak (Minced Beef optional)
- 0.5 tsp Chilli Powder
- 250g Tomatoes Tinned
- 0.5 cup Tomato Sauce
- 1 tsp Salt (to taste)
- 1 tsp Pepper (to taste)
- 2 cups Water
- 0.25 cup Rice
- 1 cup Peas
- 1 cup Corn Kernels Tinned
- 2 tsp Parsley Chopped
- 2 cups Green Salad (Optional) Tossed

Saute
Saute Onion and Garlic in Butter in a saucepan.

Brown
When soft increase heat and add minced Steak, stirring well to break up mince. Cook until meat begins to brown.

Season
Add Chilli Powder, Tomatoes, Tomato Sauce, Water, Salt and Pepper. Cover and simmer over a low heat for 15 minutes.

Combine
Stir in Rice (uncooked) and Vegetables, bring to the boil, stirring occassionaly, cover and reduce heat.

Cook
Cook gently for 20 minutes, stirring occassionaly, until Rice is tender. Add additional Water when necessary.

Top
Sprinkle with Chopped Parsley before serving.

Serve with a Tossed Green Salad.
